Shrimp Pasta with Tomatoes

12 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

2 cups cherry tomatoes, halved

4 cloves garlic, minced

1/4 cup olive oil

1/2 cup white wine (optional; can substitute with vegetable broth)

1/2 tsp red pepper flakes (adjust for spice preference)

1 tsp dried Italian herbs (oregano and basil work well)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta. Set aside.

    Sauté the Shrimp: In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

      Add the Shrimp: Add the shrimp to the skillet, seasoning with salt and pepper. Cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the pan and set aside.

        Create the Sauce: In the same skillet, pour in the white wine (or broth) and allow it to simmer for about 2 minutes, scraping any bits off the bottom of the pan. Add the halved cherry tomatoes and Italian herbs, cooking until the tomatoes soften, about 5-7 minutes.

          Combine Everything: Return the shrimp to the skillet. Add the drained pasta, along with a splash of the reserved pasta water. Toss everything together until well combined. Adjust seasoning with salt and pepper, adding more pasta water if needed for desired consistency.

            Serve: Plate the shrimp pasta, garnishing with fresh basil and a sprinkle of grated Parmesan cheese on top.
