10 oz uncooked pasta (such as penne or rigatoni)

1 lb large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

1/2 cup dry white wine (or chicken broth)

1 lemon (zested and juiced)

1/2 cup heavy cream

1 cup grated Parmesan cheese, divided

1/2 cup fresh parsley, chopped

Salt and pepper to taste

1 cup breadcrumbs (optional for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook until al dente according to package instructions. Drain and set aside.

      Sauté Shrimp: In a large skillet over medium heat, add the olive oil. Once hot, add the garlic and red pepper flakes, sautéing for about 30 seconds until fragrant. Add the shrimp and cook until pink and opaque, about 2-3 minutes. Remove shrimp and set aside.

        Prepare the Sauce: In the same skillet, add the cherry tomatoes and cook for a few minutes until they start to soften. Pour in the white wine (or broth) and bring to a simmer, scraping any bits off the bottom of the skillet. Let it cook for 2-3 minutes.

          Combine Ingredients: Stir in the lemon zest, lemon juice, and heavy cream. Mix well and season with salt and pepper. Add around 3/4 of the Parmesan cheese and half of the chopped parsley, stirring until the cheese melts and the sauce thickens slightly.

            Combine Pasta and Sauce: In a large bowl, combine the cooked pasta, shrimp, and sauce. Mix until the pasta is evenly coated in the sauce.

              Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch (or similar size) baking dish. Sprinkle the remaining Parmesan cheese on top, followed by breadcrumbs if using.

                Bake: Place in the preheated oven and bake for about 20-25 minutes or until bubbly and golden on top.

                  Serve: Remove from the oven and let cool slightly. Garnish with the remaining parsley before serving.
