2 ripe bananas, mashed

1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 teaspoon cinnamon

½ cup buttermilk

1 large egg

1 teaspoon vanilla extract

Oil (for frying)

Optional: Chopped nuts or chocolate chips for added texture

In a large mixing bowl, combine the mashed bananas, flour, sugar, baking powder, baking soda, salt, and cinnamon. Mix well.

    In another bowl, whisk together the buttermilk, egg, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients and stir until just combined. If desired, fold in chopped nuts or chocolate chips for an extra treat.

        Heat a generous amount of oil in a skillet over medium heat. Ensure the oil is hot enough for frying (about 350°F or 175°C).

          Using a spoon or cookie scoop, drop dollops of the batter into the hot oil, careful not to overcrowd the pan. Fry until golden brown on one side, approximately 2-3 minutes.

            Flip the fritters and cook for another 2-3 minutes, ensuring they are cooked through and crisp on both sides.

              Remove the fritters from the skillet and drain on paper towels to absorb excess oil.
