Ingredients
  

  • 2 lbs beef chuck roast cut into 2-inch cubes
  • 6 dried New Mexico red chiles stems and seeds removed
  • 1 medium onion finely chopped
  • 4 cloves garlic minced
  • 2 cups beef broth
  • 1 can 14 oz fire-roasted diced tomatoes
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Fresh cilantro chopped (for garnish)
  • Lime wedges for serving

Instructions

  • Toast the chiles in a dry skillet over medium heat for about 2 minutes, flipping frequently.
  • In a blender, combine toasted chiles, fire-roasted tomatoes, garlic, cumin, oregano, paprika, salt, pepper, and vinegar with 1 cup of beef broth. Blend until smooth.
  • Heat olive oil in a large skillet over medium-high heat. Season beef cubes with salt and pepper and sear in batches until browned.
  • Transfer the browned beef to the crockpot.
  • Pour the blended chile sauce over the beef, add chopped onion and remaining beef broth, and stir well.
  • Cover the crockpot and cook on low for 6-8 hours or high for 4-5 hours until beef is tender.
  • Taste and adjust seasoning if needed before serving.
  • Garnish with chopped cilantro and serve with lime wedges.
