Ingredients

1 lb boneless, skinless chicken breasts

1 can (15 oz) whole kernel corn, drained

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup shredded cheddar cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

Salt and pepper to taste

2 cups frozen tater tots

1/4 cup chopped fresh parsley (for garnish)

Instructions

Begin by placing the boneless chicken breasts at the bottom of the slow cooker.

In a mixing bowl, combine the drained corn, cream of chicken soup, sour cream, half of the shredded cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix well until all ingredients are combined.

Pour the corn mixture over the chicken in the slow cooker, spreading it evenly.

Cover the slow cooker and set it on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.

Once the cooking time is up, shred the chicken directly in the slow cooker using two forks, stirring it into the casserole mixture.

Carefully place the frozen tater tots in a single layer over the casserole mixture. If desired, sprinkle the remaining cheddar cheese on top of the tater tots.

Cover the slow cooker again and cook on high for an additional 30-45 minutes, or until the tater tots are golden brown and crispy.

Once finished, garnish with fresh parsley before serving.
