1 pound of kielbasa, sliced

4 medium Yukon gold potatoes, diced

1 large onion, sliced

2 cloves garlic, minced

1 red bell pepper, chopped

1 cup of chicken broth

1 tablespoon Dijon mustard

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prep the Vegetables: Wash and dice the Yukon gold potatoes, slice the onion, and chop the red bell pepper. Mince the garlic.

    Sauté the Kielbasa (optional): In a skillet over medium heat, add olive oil and sauté the sliced kielbasa until browned (about 5 minutes). This step enhances the flavor but can be skipped if desired.

      Layer in Slow Cooker: Place the diced potatoes evenly at the bottom of the slow cooker. Add the sliced onion, garlic, red bell pepper, and browned kielbasa on top.

        Mix the Sauce: In a separate bowl, combine the chicken broth, Dijon mustard, dried thyme, smoked paprika, salt, and pepper. Stir well to mix all the ingredients.
