2 lbs flank steak, sliced thinly against the grain

1/2 cup soy sauce

1/4 cup brown sugar

1/4 cup water

1 tablespoon vegetable oil

1 tablespoon minced garlic

1 tablespoon minced ginger

1/2 teaspoon red pepper flakes (optional)

1 cup scallions, chopped (green parts only)

2 tablespoons cornstarch

2 tablespoons sesame oil

Cooked rice for serving

Prepare the Steak: In a bowl, mix the soy sauce, brown sugar, water, vegetable oil, garlic, ginger, and red pepper flakes (if using). Add the sliced flank steak, making sure all pieces are well coated. Marinate for at least 30 minutes if time allows.

    Slow Cook: Transfer the marinated beef and sauce into the slow cooker. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the beef is tender.

      Thicken the Sauce: About 30 minutes before serving, mix the cornstarch with a tablespoon of cold water to create a slurry. Stir this into the slow cooker along with the sesame oil. Mix well to incorporate.

        Final Touches: Add the chopped scallions to the slow cooker and stir. Let it cook for an additional 30 minutes with the lid on to allow the sauce to thicken.

          Serve: Serve the Mongolian beef over cooked rice, drizzling some extra sauce from the slow cooker over the top for added flavor and garnishing with more scallions if desired.
