3-4 lbs beef chuck roast

1 tablespoon olive oil

2 teaspoons salt

1 teaspoon black pepper

1 teaspoon dried thyme

1 teaspoon garlic powder

1 teaspoon onion powder

4 cups beef broth

1 tablespoon Worcestershire sauce

4 medium carrots, chopped

4 medium potatoes, quartered

1 medium onion, chopped

2 tablespoons cornstarch (optional, for thickening)

2 tablespoons water (optional, for mixing with cornstarch)

Instructions
 

Prepare the Meat: Season the beef chuck roast generously with salt, black pepper, thyme, garlic powder, and onion powder, rubbing the spices into the meat.

    Sear the Roast: In a large skillet over medium-high heat, add olive oil. Once hot, sear the roast on all sides until browned (about 4-5 minutes per side). This step adds flavor.

      Assemble in the Slow Cooker: Transfer the seared roast to the slow cooker. Add chopped carrots, potatoes, and onion around the roast.

        Make the Gravy: In a small bowl, mix together the beef broth and Worcestershire sauce. Pour this mixture over the roast and vegetables in the slow cooker.

          Slow Cook: Cover and cook on low for 8 hours or high for 4-5 hours, until the meat is tender and easily shreds with a fork.

            Optional Gravy Thickening: If you prefer a thicker gravy, mix cornstarch with water in a small bowl to create a slurry. About 30 minutes before serving, stir this into the juices in the slow cooker and let it thicken.

              Serve: Remove the roast and vegetables from the slow cooker, slice the meat, and arrange on a platter. Drizzle with the gravy and serve alongside the vegetables.
