Ingredients
  

1.5 lbs boneless, skinless chicken thighs

1 cup salsa (mild or spicy, depending on preference)

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 cup frozen corn

1 block (8 oz) cream cheese

1 cup shredded cheese (cheddar or Mexican blend)

Corn or flour tortillas

Fresh cilantro, chopped (for garnish)

Avocado or guacamole (for serving)

Lime wedges (for serving)

Instructions
 

Prepare the Chicken: Place the chicken thighs at the bottom of the slow cooker.

    Add Salsa and Seasoning: Pour the salsa over the chicken thighs and sprinkle the taco seasoning evenly on top.

      Incorporate Beans and Corn: Add the drained black beans and frozen corn on top of the chicken mixture.

        Cream Cheese Layer: Place the block of cream cheese on top of all the ingredients in the slow cooker. Do not stir at this point.

          Cook: Cover the slow cooker with the lid and cook on low for 6-7 hours or on high for 4 hours.

            Shred Chicken: Once the cooking time is complete, remove the chicken thighs and shred them using two forks. Return the shredded chicken to the slow cooker and mix everything well, including the melted cream cheese.

              Add Shredded Cheese: Fold in the shredded cheese until melted and well combined.

                Serve: Spoon the chicken and queso mixture into warm tortillas and garnish with fresh cilantro. Serve with avocado or guacamole and lime wedges on the side.
