4 oz smoked salmon

1 medium cucumber

1/2 cup hummus (store-bought or homemade)

1 tablespoon fresh dill (chopped)

1 teaspoon lemon juice

Salt and pepper to taste

1 tablespoon capers (optional)

Toothpicks or skewers for serving

Prep the Cucumber: Wash the cucumber and slice it thinly lengthwise using a vegetable peeler or mandoline to create long strips. Aim for about 10-12 strips.

    Mix the Hummus: In a small bowl, combine the hummus with the fresh dill, lemon juice, salt, and pepper. Stir until well mixed.

      Assemble the Roll-Ups: Lay a slice of smoked salmon flat on a clean surface. Spread a thin layer of the dill hummus evenly across the salmon.

        Add Cucumber: Place one cucumber strip at one end of the salmon slice, and if using, add a few capers on top.

          Roll it Up: Gently roll the smoked salmon slice starting from the cucumber end, ensuring it’s tight but not too tight to break.

            Secure the Roll-Up: Use a toothpick or skewer to secure the roll. Repeat the process with the remaining ingredients.
