  • 4 pieces bone-in skin-on chicken thighs
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 large onion thinly sliced
  • 2 cloves garlic minced
  • 1 piece bell pepper diced
  • 10 oz cream of mushroom soup
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme

Instructions

  • Season both sides of the chicken thighs with salt, pepper, and smoked paprika.

  • Flip the thighs and sear the other side for an additional 5 minutes, then remove from skillet.
  • Sauté sliced onion and diced bell pepper in the same skillet for 4-5 minutes until softened.
  • Add minced garlic and sauté for another minute until fragrant.
  • Stir in cream of mushroom soup, chicken broth, and dried thyme until well combined.
  • Fold in long-grain rice and nestle seared chicken thighs on top, skin-side up.
  • Bring to a gentle boil, reduce heat to low, cover, and simmer for 25-30 minutes.
  • Remove from heat, let rest for 5 minutes, then fluff rice with a fork.
