Ingredients

1 cup (2 sticks) unsalted butter, softened

2 cups granulated sugar

4 large eggs, at room temperature

1 teaspoon vanilla extract

3 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

1 cup whole milk, at room temperature

1 tablespoon lemon zest (optional, for a refreshing twist)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or two 9-inch round cake pans.

Cream the Butter and Sugar: In a large mixing bowl, using an electric mixer, cream together the softened butter and granulated sugar until the mixture is light and fluffy (about 5 minutes).

Incorporate Eggs and Vanilla: Add the eggs to the butter mixture one at a time, mixing well after each addition. Then, mix in the vanilla extract (and lemon zest if using).

Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Mix Ingredients: Gradually add the dry ingredients to the wet mixture, alternately with the whole milk. Start and end with the flour mixture. Mix until just combined; be careful not to overmix.

Pour into Pan: Pour the batter into the prepared baking pan(s) and smooth the top with a spatula.

Bake: Bake in the preheated oven for 30-35 minutes for round pans or 40-45 minutes for a rectangle pan, or until a toothpick inserted into the center of the cake comes out clean.

Cool Down: Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Serve: Once cooled, you can frost it with your favorite frosting or serve it plain with a dusting of powdered sugar for a delightful treat!
