2 (14.75 oz) cans of salmon, drained and flaked

1 cup breadcrumbs (preferably panko)

1/2 cup yellow onion, finely chopped

1/4 cup fresh parsley, chopped

2 large eggs, beaten

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Vegetable oil, for frying

Instructions
 

In a large mixing bowl, combine the flaked salmon, breadcrumbs, chopped onion, parsley, beaten eggs, Dijon mustard, garlic powder, smoked paprika, salt, and pepper. Mix well to combine all ingredients thoroughly.

    Shape the mixture into patties, about 2 inches wide and 1/2 inch thick. Place the patties on a parchment-lined tray.

      In a large skillet, heat about 1/4 inch of vegetable oil over medium heat. Test the oil by dropping a small piece of the mixture into it; if it sizzles, it's ready.

        Carefully add the patties to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown and crisp.

          Once cooked, transfer the patties to a paper towel-lined plate to absorb any excess oil.
