  • 1 tablespoon sesame oil
  • 2 cloves garlic finely minced

  • ½ cup panko breadcrumbs
  • 1 large egg
  • 4 burger buns whole grain or brioche
  • 1 cup fresh lettuce leaves
  • 1 avocado thinly sliced
  • ½ cup mayonnaise
  • 1 tablespoon fresh lime juice
  • 1 cup kimchi finely chopped
  • ¼ cup brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame seeds
  • 1 tablespoon water

Instructions

  • In a small saucepan, combine kimchi, brown sugar, rice vinegar, sesame seeds, and water over medium heat.
  • Stir occasionally and simmer for 10-15 minutes until thickened, then cool.
  • In a large bowl, mix ground chicken with gochujang, soy sauce, sesame oil, garlic, ginger, black pepper, panko, and egg.
  • Divide the mixture into four equal portions and shape into patties.
  • Preheat a skillet or grill over medium-high heat and cook patties for 5-7 minutes on each side until cooked through.
  • In a small bowl, mix mayonnaise and lime juice, adding gochujang for extra spice if desired.
  • Toast the burger buns until golden, then spread spicy mayo on the bottom half.
  • Layer with lettuce, a chicken patty, avocado slices, and kimchi jam, then cap with the top bun.
  • Serve immediately with your choice of sides.
