Ingredients
  

1 pound ground turkey

1 medium head of cauliflower, riced (about 4 cups)

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (14 oz) diced tomatoes, undrained

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

Fresh cilantro or parsley, for garnish

Lime wedges, for serving

Instructions
 

Prepare Cauliflower Rice: Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Set aside.

    Cook Turkey: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 3 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

      Brown the Meat: Increase the heat to medium-high and add the ground turkey to the skillet. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.

        Add Vegetables: Stir in the diced bell pepper and cook for 3-4 minutes until softened.

          Add Spices and Tomatoes: Mix in the chili powder, cumin, smoked paprika, cayenne pepper, and salt and pepper. Pour in the diced tomatoes with their juice and stir well to combine. Allow to simmer for 5 minutes so the flavors meld.

            Incorporate Cauliflower Rice: Add the riced cauliflower to the skillet. Stir well and cook for an additional 5-7 minutes until the cauliflower is tender and heated through. Adjust seasoning as needed.

              Serve: Distribute the spicy turkey cauliflower rice among serving plates. Garnish with fresh cilantro or parsley and serve with lime wedges on the side for a zesty kick.
