Ingredients
  

  • 12 pieces jumbo pasta shells
  • 1 cup ricotta cheese
  • 2 cups fresh spinach finely chopped
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups basil pesto sauce
  • Fresh basil leaves for garnish

Instructions

  • Preheat your oven to 375°F (190°C).
  • Cook the jumbo pasta shells according to package instructions until al dente, then drain and cool slightly.
  • In a mixing bowl, combine ricotta cheese, chopped spinach, mozzarella cheese, Parmesan cheese, egg, garlic powder, salt, and pepper.
  • Fill each cooked pasta shell with the ricotta and spinach mixture.
  • Spread half of the basil pesto sauce in a baking dish.
  • Arrange the stuffed shells in a single layer on top of the pesto sauce.
  • Drizzle the remaining pesto sauce over the stuffed shells.
  • Cover with aluminum foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 10 minutes until cheese is bubbly.
  • Garnish with fresh basil leaves before serving.
