  • 1 tablespoon extra virgin olive oil
  • ½ cup marinara sauce warmed

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a bowl, combine spinach, ricotta, Parmesan, garlic powder, salt, and pepper until creamy.
  • Create a pocket in each chicken breast by slicing horizontally.
  • Fill each pocket with the spinach mixture and secure with toothpicks if needed.
  • Heat olive oil in a skillet and sear the chicken for 3-4 minutes on each side.
  • Pour marinara sauce over the chicken and transfer the skillet to the oven.
  • Bake for 20-25 minutes until the chicken reaches 165°F (74°C).
