1 lb flank steak (cut into 1-inch cubes)

3 tbsp olive oil

Salt and pepper (to taste)

4 cloves garlic (minced)

1/2 cup unsalted butter (1 stick)

1 tbsp fresh thyme leaves (chopped, or 1 tsp dried thyme)

1 tbsp fresh parsley (chopped, for garnish)

Optional: Lime wedges for serving

Prepare the Steak: Pat the flank steak cubes dry with paper towels. This will help them to sear properly. Season generously with salt and pepper on all sides.

    Heat the Oil: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until hot but not smoking.

      Sear the Steak Bites: Carefully add the steak cubes in a single layer (you may need to do this in batches) and cook for about 2-3 minutes on each side, or until they develop a nice crust and reach your desired level of doneness. For medium-rare, aim for an internal temperature of 130-135°F. Remove the steak bites from the skillet and set aside.

        Make the Garlic Butter: In the same skillet, reduce the heat to medium and add the remaining tablespoon of olive oil and the butter. Once the butter melts, stir in the minced garlic and chopped thyme. Cook for about 1-2 minutes, until the garlic is fragrant but not browned.

          Combine Everything: Return the seared steak bites to the skillet and toss them in the garlic butter sauce until well-coated. Cook for an additional minute to heat through.

            Serve: Transfer the steak bites to a serving platter, drizzle with any remaining garlic butter from the pan, sprinkle with fresh parsley, and serve immediately with optional lime wedges for an extra zing.
