For the fruit filling:

2 cups strawberries, hulled and sliced

2 cups peaches, peeled and chopped

1/4 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1/2 teaspoon vanilla extract

For the crisp topping:

1 cup old-fashioned rolled oats

1/2 cup all-purpose flour

1/3 cup brown sugar, packed

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup cold unsalted butter, diced into small cubes

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Fruit Filling: In a large mixing bowl, combine the sliced strawberries, chopped peaches, sugar, lemon juice, cornstarch, and vanilla extract. Toss gently until the fruit is evenly coated. Transfer this mixture to a greased 9x13-inch baking dish.

      Make the Crisp Topping: In another mixing bowl, combine the rolled oats, flour, brown sugar, cinnamon, and salt. Mix well. Add the cold butter cubes to the dry mixture. Using your fingers or a pastry cutter, work the butter into the dry ingredients until the mixture resembles coarse crumbs.

        Assemble the Crisp: Evenly sprinkle the crisp topping over the fruit filling in the baking dish.

          Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the fruit is bubbling and the topping is golden brown.

            Cool and Serve: Remove from the oven and allow to cool for about 10 minutes before serving. This dish is delicious warm and pairs wonderfully with vanilla ice cream or whipped cream.
