Ingredients
  

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 cup bell peppers (red, green, or yellow), diced

1 can (15 oz) diced tomatoes, with juice

4 cups beef or vegetable broth

1 cup cooked rice (white or brown)

1 teaspoon Italian seasoning

1 teaspoon paprika

1/2 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1 cup corn kernels (fresh, frozen, or canned)

1 cup kidney beans (canned, drained, and rinsed)

Olive oil for sautéing

Fresh parsley for garnish (optional)

Instructions
 

In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent (about 3-4 minutes).

    Add the ground beef (or turkey) to the pot, breaking it apart with a spoon. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.

      Stir in the diced bell peppers and sauté for an additional 3-4 minutes until they begin to soften.

        Pour in the diced tomatoes with their juice, followed by the beef or vegetable broth. Stir well to combine.

          Add the cooked rice, Italian seasoning, paprika, salt, pepper, corn, and kidney beans. Mix thoroughly.

            Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for 20-25 minutes, allowing the flavors to meld together. Stir occasionally.

              Taste and adjust seasoning if necessary. If the soup is too thick, you can add more broth or water to reach your desired consistency.

                Serve hot, garnished with fresh parsley if desired.
