2 medium red onions, thinly sliced

3 tablespoons sumac

2 tablespoons olive oil

1 tablespoon fresh lemon juice

1 teaspoon honey (optional, for sweetness)

1 teaspoon salt

¼ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions
 

In a large mixing bowl, combine the thinly sliced red onions with salt, and leave for about 10 minutes to soften and release their juices.

    Rinse the onions under cold water to remove excess salt, then drain well.

      In a separate bowl, whisk together the sumac, olive oil, lemon juice, honey (if using), black pepper, and a pinch of salt until well combined.

        Add the drained onions to the dressing and toss until the onions are evenly coated with the mixture.

          Let the onions marinate for at least 30 minutes at room temperature, or refrigerate for up to 2 hours for deeper flavor.

            Before serving, give the onions a gentle toss and garnish with fresh chopped parsley.
