Ingredients
  

4 ears of fresh sweet corn, husked

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, finely chopped

1 red bell pepper, diced

1/4 cup fresh cilantro, chopped

1/4 cup feta cheese, crumbled

3 tablespoons olive oil

2 tablespoons apple cider vinegar

1 tablespoon honey

1 teaspoon garlic powder

Salt and pepper to taste

Juice of 1 lime

Instructions
 

Prepare the Corn: Bring a large pot of salted water to a boil. Add the husked ears of corn and cook for about 5-7 minutes until tender. Remove from water and allow to cool. Once cool, cut the kernels off the cob into a large mixing bowl.

    Combine Vegetables: To the bowl with corn, add the halved cherry tomatoes, diced cucumber, red onion, red bell pepper, cilantro, and crumbled feta cheese. Gently mix to combine.

      Make the Dressing: In a separate small bowl, whisk together the olive oil, apple cider vinegar, honey, garlic powder, lime juice, salt, and pepper until well combined.

        Toss the Salad: Pour the dressing over the corn and vegetable mixture. Toss gently to coat all the ingredients evenly with the dressing.

          Chill: Let the salad sit in the refrigerator for at least 30 minutes to allow the flavors to meld together.
