1 pound Italian sausage (sweet or spicy), sliced

2 medium bell peppers (any color), sliced

1 medium zucchini, sliced into half-moons

1 cup corn kernels (fresh, frozen, or canned)

1 small onion, diced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes for added heat

Instructions
 

Heat the Oil: In a large skillet, heat the olive oil over medium heat.

    Sauté Sausage: Add the sliced Italian sausage to the skillet and cook until browned, about 5-7 minutes. Break apart any larger pieces with a spatula. Once cooked through, remove the sausage and set aside.

      Cook Vegetables: In the same skillet, add the diced onion and sauté for about 2-3 minutes until translucent. Add minced garlic and continue to sauté for another minute until fragrant.

        Add Bell Peppers and Zucchini: Stir in the sliced bell peppers and zucchini. Sauté for about 5 minutes until they start to soften.

          Incorporate Corn and Seasonings: Add the corn kernels, smoked paprika, Italian seasoning, salt, and pepper. Mix well and allow everything to cook together for an additional 3-4 minutes.

            Combine with Sausage: Return the cooked sausage to the skillet and stir to combine all ingredients. Let it cook for another 2-3 minutes to meld the flavors together.

              Serve: Remove from heat, garnish with fresh parsley, and sprinkle with red pepper flakes if desired. Serve warm.
