Ingredients
  

  • 2 cups sushi rice
  • 2 ½ cups water
  • ¼ cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 4 sheets nori seaweed
  • 1 cucumber cut into thin matchsticks
  • 1 ripe avocado sliced into strips
  • ½ pound fresh sushi-grade fish such as salmon or tuna, thinly sliced
  • Soy sauce for dipping
  • Wasabi and pickled ginger for garnish

Instructions

  • Rinse sushi rice under cold water until water runs clear, then drain well.
  • Combine rinsed rice with 2 ½ cups water in a saucepan, bring to boil, then simmer for 20 minutes until tender.
  • In a small saucepan, heat rice vinegar, sugar, and salt over low heat until dissolved, then cool.
  • Transfer cooked rice to a bowl and gently fold in the cooled vinegar mixture, allowing it to cool to room temperature.
  • Lay a sheet of nori on a bamboo sushi mat, shiny-side down.
  • Wet hands and spread sushi rice evenly over nori, leaving a 1-inch border at the top.
  • Place cucumber, avocado, and fish along the bottom edge of the rice-covered nori.
  • Roll the nori tightly using the sushi mat, applying gentle pressure.
  • Slice the roll into 6-8 pieces with a sharp knife, wiping the knife between cuts.
  • Repeat with remaining ingredients and serve with soy sauce, wasabi, and pickled ginger.
