Ingredients
  

4 cups butternut squash, peeled and cubed

1 cup brown sugar

1/2 cup unsalted butter, melted

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1 teaspoon vanilla extract

2 large eggs, beaten

1/2 cup milk

1 cup crushed pecans (optional for topping)

1 cup mini marshmallows (optional for topping)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large pot, bring water to a boil. Add the cubed butternut squash and cook until tender, about 10-15 minutes. Drain and let cool slightly.

      In a large mixing bowl, mash the cooked butternut squash using a potato masher or fork until smooth.

        Mix in the brown sugar, melted butter, cinnamon, nutmeg, ginger, vanilla extract, beaten eggs, and milk. Stir until well combined and smooth.

          Pour the butternut squash mixture into a greased 2-quart casserole dish, spreading it evenly.

            If using, sprinkle the crushed pecans and mini marshmallows on top for added texture and sweetness.

              Bake in the preheated oven for 30-35 minutes, or until the casserole is set and the top is lightly golden.

                Let cool for a few minutes before serving. Enjoy this delightful dish warm!
