1 red bell pepper, diced

1 small yellow onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

3 tablespoons olive oil

4 large eggs

Fresh cilantro or green onions, for garnish

Avocado slices, for serving (optional)

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced sweet potatoes to the skillet, season with salt and black pepper, and stir to coat them with oil.

    Cook the Sweet Potatoes: Cook the sweet potatoes for about 10 minutes, stirring occasionally, until they are starting to soften and develop a slight crisp on the edges.

      Add Vegetables: Stir in the diced onion and red bell pepper. Cook for another 5-7 minutes until the onion becomes translucent and the bell pepper softens.
