Ingredients
  

  • 1 pound ground beef or ground turkey
  • 1 packet taco seasoning mix
  • 1 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • ½ cup sliced black olives
  • ¼ cup chopped green onions
  • 1 package mini phyllo pastry cups
  • to taste fresh cilantro for garnish
  • to taste sour cream for serving

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, cook the ground beef or turkey until browned, breaking it into small pieces.
  • Sprinkle taco seasoning over the meat and add ¼ cup of water, stirring to combine. Simmer for 5 minutes.
  • Arrange mini phyllo pastry cups on a baking sheet.
  • Once the meat mixture thickens, remove from heat and let cool slightly.
  • Fill each phyllo cup with about one tablespoon of seasoned taco meat.
  • Drizzle about 1 teaspoon of ranch dressing on top of the meat in each cup.
  • Sprinkle shredded cheddar cheese, diced tomatoes, sliced black olives, and chopped green onions over each cup.
  • Bake for 10-12 minutes until cheese is bubbly and pastry cups are golden brown.
