1 pound chicken breast, cut into 1-inch cubes

1/4 cup soy sauce

1/4 cup sake (or dry white wine)

2 tablespoons mirin (sweet rice wine)

2 tablespoons honey

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon grated fresh ginger

1/4 teaspoon black pepper

1 tablespoon cornstarch (optional, for thickening)

1 tablespoon water (for cornstarch slurry)

1 bell pepper, cut into 1-inch pieces

1 red onion, cut into wedges

Instructions
 

Marinate the Chicken: In a mixing bowl, combine soy sauce, sake, mirin, honey, sesame oil, minced garlic, grated ginger, and black pepper. Stir well to combine. Reserve 1/4 cup of the marinade for basting. Add the chicken cubes to the marinade, ensuring they are thoroughly coated. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

    Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent them from burning on the grill.

      Assemble Skewers: Thread marinated chicken onto skewers, alternating with pieces of bell pepper and onion for color and flavor.

        Preheat the Grill: Preheat your grill or grill pan to medium-high heat.

          Cook the Skewers: Place the skewers on the grill and cook for about 4-5 minutes on each side, basting with the reserved marinade until the chicken is cooked through and has nice grill marks. If desired, you can mix the cornstarch with water to create a thickener for the remaining marinade to brush on during grilling.

            Serve: Remove the skewers from the grill and let them rest for a minute. Serve hot, drizzled with any remaining teriyaki sauce and garnish with sesame seeds and chopped green onions if desired.
