Ingredients
  

2 cups cooked chicken breast, diced (preferably grilled or rotisserie)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup sweet corn (fresh or canned)

1/2 cup black beans, rinsed and drained

1/2 cup red onion, finely chopped

1 bell pepper (red or green), diced

1/4 cup fresh cilantro, chopped

1 avocado, diced

1/2 cup shredded cheddar cheese (or a Mexican blend)

1/4 cup lime juice

3 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Instructions
 

Prepare the Dressing: In a small bowl, whisk together lime juice, olive oil, ground cumin, chili powder, salt, and pepper until well combined. Set aside.

    Combine the Ingredients: In a large mixing bowl, combine the diced chicken, cherry tomatoes, cucumber, sweet corn, black beans, red onion, and bell pepper. Gently toss to mix all the ingredients.

      Add the Dressing: Pour the dressing over the salad mixture and toss until everything is evenly coated with the dressing.

        Finishing Touches: Gently fold in the diced avocado and chopped cilantro, being careful not to mash the avocado.

          Serve: Transfer the salad to a serving dish and sprinkle the shredded cheese on top for extra flavor. Serve immediately or refrigerate for about 30 minutes to allow the flavors to meld.
