1 lb ground chicken

1 tablespoon vegetable oil

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 red bell pepper, finely diced

1 small carrot, grated

1/4 cup green onions, sliced

1/4 cup peanuts, chopped (optional)

1 tablespoon soy sauce

1 tablespoon fish sauce

1 tablespoon lime juice

2 teaspoons brown sugar

1/2 teaspoon crushed red pepper flakes (adjust to taste)

1 head of butter lettuce or romaine lettuce, leaves separated

Fresh cilantro and mint leaves for garnish

Instructions
 

Sauté the Chicken: In a large skillet, heat the vegetable oil over medium heat. Add the ground chicken and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

    Add Aromatics: Once the chicken is nearly cooked through, stir in the minced garlic and ginger, cooking for another 1-2 minutes until fragrant.

      Vegetables Galore: Add the diced red bell pepper and grated carrot to the skillet. Sauté for another 3-4 minutes until the vegetables are slightly tender.

        Flavor It Up: In a small bowl, combine the soy sauce, fish sauce, lime juice, brown sugar, and crushed red pepper flakes. Mix well and then pour this sauce over the chicken and vegetable mixture. Stir for a couple of minutes until everything is well coated and heated through.

          Add Crunch: Stir in the chopped green onions and peanuts (if using) for added crunch and flavor, mixing well.

            Prepare the Wraps: Remove the skillet from the heat. Take a lettuce leaf, spoon a generous amount of the chicken mixture into the center, and garnish with fresh cilantro and mint.
