For the crust:

1 ½ cups chocolate cookie crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

For the cheesecake filling:

24 oz cream cheese, softened

1 cup granulated sugar

3 large eggs

1 cup sour cream

½ cup strong brewed coffee, cooled

2 tablespoons instant coffee granules

1 teaspoon vanilla extract

¼ teaspoon salt

For the topping:

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

Dark chocolate shavings (for garnish)

Cocoa powder (for dusting, optional)

Instructions
 

Prepare the crust: Preheat your oven to 325°F (160°C). In a mixing bowl, combine the chocolate cookie crumbs, melted butter, and granulated sugar until well mixed. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and let cool.

    Make the filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy using an electric mixer. Gradually add the granulated sugar and mix until well combined.

      Add eggs: Beat in the eggs one at a time, mixing well after each addition. Then mix in the sour cream, brewed coffee, instant coffee granules, vanilla extract, and salt. Continue to beat until the mixture is creamy and smooth.

        Assemble the cheesecake: Pour the cheesecake filling over the cooled crust, spreading it evenly. Tap the pan gently on the counter to release any air bubbles.

          Bake the cheesecake: Place the springform pan on a baking sheet and bake in the preheated oven for about 50-60 minutes, or until the center is set but still slightly jiggly (it will firm up as it cools).

            Cool and chill: Turn off the oven and crack the door ajar, allowing the cheesecake to cool in the oven for 1 hour. After that, remove it and refrigerate for at least 4 hours, preferably overnight.

              Prepare the topping: In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Spread or pipe the whipped cream over the chilled cheesecake.
