Ingredients

Crust:

1 ½ cups coffee-flavored digestive biscuits, crushed

½ cup unsalted butter, melted

2 tablespoons granulated sugar

Cheesecake Filling:

16 oz (2 packages) cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

1 cup brewed espresso or strong coffee, cooled

2 tablespoons all-purpose flour

1 tablespoon cocoa powder (optional, for a chocolate hint)

Topping:

1 cup heavy cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

Chocolate shavings or coffee beans for garnish

Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C).

    Prepare the Crust:

      - In a mixing bowl, combine the crushed coffee-flavored biscuits, melted butter, and granulated sugar. Mix until well combined and the mixture resembles wet sand.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Use a flat-bottomed measuring cup for an even layer. Bake for 10 minutes, then remove from the oven and let cool.

          Prepare the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 3 minutes.

              - Gradually add in the granulated sugar and vanilla extract, mixing until fully incorporated.

                - Add the eggs, one at a time, mixing well after each addition.

                  - Next, blend in the sour cream, cooled espresso, flour, and cocoa powder (if using) until smooth and well combined. Be careful not to overmix.

                    Bake the Cheesecake:

                      - Pour the cheesecake batter over the cooled crust in the springform pan.

                        - Bake in the preheated oven for 55-60 minutes or until the edges are set but the center still has a slight jiggle.

                          - Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for an hour to prevent cracking.

                            Chill the Cheesecake:

                              - After the cheesecake has cooled to room temperature, refrigerate for at least 4 hours, preferably overnight, to allow it to set properly.

                                Prepare the Topping:

                                  - In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

                                    - Once the cheesecake is fully chilled, spread the whipped cream evenly over the top of the cheesecake.

                                      - Garnish with chocolate shavings or coffee beans for an elegant touch.

                                        Serve and Enjoy:

                                          - Carefully release the sides of the springform pan and slice the cheesecake into wedges. Serve chilled and savor each decadent bite!
