Ingredients
  

14 oz firm tofu, drained and cubed

2 cups broccoli florets

1 red bell pepper, sliced

1 cup snap peas

1 medium carrot, julienned

3 tablespoons soy sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece ginger, grated

1 tablespoon cornstarch mixed with 2 tablespoons of water (for thickening)

2 tablespoons vegetable oil

1 teaspoon sesame seeds (for garnish)

Salt and pepper to taste

Instructions
 

Prep the Tofu: Begin by pressing the tofu between paper towels to remove excess moisture. Cut the tofu into 1-inch cubes.

    Marinate Tofu: In a bowl, combine the cubed tofu with 2 tablespoons of soy sauce, minced garlic, and grated ginger. Let it marinate for at least 15 minutes for enhanced flavor.

      Cook Vegetables: Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the broccoli, red bell pepper, snap peas, and carrots. Stir-fry for 4-5 minutes until they are tender yet crisp. Remove the vegetables from the pan and set aside.

        Cook Tofu: In the same pan, add the remaining vegetable oil and the marinated tofu. Sauté for 5-7 minutes, turning the tofu to get golden brown on all sides.

          Combine Ingredients: Once the tofu is golden, return the cooked vegetables to the pan. Pour in the remaining soy sauce and sesame oil, tossing everything together.

            Thicken Sauce: Stir in the cornstarch mixture and continue to stir until the sauce thickens (about 1-2 minutes). Season with salt and pepper to taste.

              Garnish and Serve: Remove from heat, sprinkle sesame seeds on top, and serve the stir-fry hot with rice or noodles.
