Tomato Jam Bruschetta

Ingredients
  

4 cups ripe tomatoes, chopped (preferably a mix of heirloom varieties)

1 cup finely chopped red onions

3 cloves garlic, minced

1/2 cup brown sugar

1/4 cup balsamic vinegar

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 French baguette, sliced into 1/2 inch rounds

Fresh basil leaves for garnish

Crumbled goat cheese (optional)

Instructions
 

In a large saucepan, combine the chopped tomatoes, red onions, garlic, brown sugar, balsamic vinegar, olive oil, salt, pepper, and thyme. Stir well to combine.

    Cook the mixture over medium heat until it begins to bubble. Lower the heat and simmer uncovered for about 30-40 minutes, stirring occasionally, until the mixture thickens and becomes jam-like.

      While the tomato jam is cooking, preheat your oven to 400°F (200°C).

        Arrange the baguette slices on a baking sheet and lightly brush each side with olive oil. Bake them for 8-10 minutes, flipping halfway, until they are golden and crispy.

          Once the tomato jam has thickened, remove it from the heat and let it cool slightly.

            To assemble the bruschetta, spread a generous spoonful of the tomato jam onto each toasted baguette slice.

              If desired, top with crumbled goat cheese for added creaminess.

                Garnish with fresh basil leaves and serve immediately.
