8 oz spaghetti

2 tablespoons olive oil

2 boneless, skinless chicken breasts, cut into bite-sized pieces

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

1 cup fresh spinach, roughly chopped

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional for a kick)

Salt and pepper to taste

¼ cup grated Parmesan cheese

Fresh basil leaves for garnish

Instructions
 

Cook the Spaghetti: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the spaghetti and set aside.

    Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Once hot, add the chicken pieces and season with salt and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the can of diced tomatoes (with juices), and stir in the oregano, basil, and red pepper flakes (if using). Let the sauce simmer for about 5 minutes, allowing the flavors to meld.

        Add Spinach and Chicken: Stir in the chopped spinach and cooked chicken into the tomato sauce. Cook for an additional 2-3 minutes until the spinach has wilted.

          Combine Pasta and Sauce: Add the drained spaghetti to the skillet with the sauce. Toss well to combine, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

            Serve: Divide the Tomato Spinach Chicken Spaghetti among plates. Top with grated Parmesan cheese and garnish with fresh basil leaves.
