8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

2 cups fresh spinach leaves

2 cups cherry tomatoes, halved

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup olive oil

1/4 cup white wine (or vegetable broth for a non-alcoholic version)

Juice of 1 lemon

1/4 cup grated Parmesan cheese (optional)

Fresh basil leaves for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine or spaghetti, and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant. Add the shrimp, seasoning with salt and black pepper. Cook for 2-3 minutes on each side until the shrimp turn pink and opaque. Remove shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the cherry tomatoes and cook for about 5 minutes until they start to blister. Pour in the white wine (or vegetable broth) and lemon juice, scraping up any bits stuck to the pan. Simmer for 2 minutes.

        Combine Spinach and Pasta: Add the spinach to the skillet, stirring until wilted. Then, return the cooked shrimp to the skillet. Toss in the cooked pasta along with a splash of the reserved pasta water to create a light sauce. Stir everything well to combine, adding more pasta water if necessary to reach desired consistency.

          Serve: Plate the pasta and sprinkle with grated Parmesan if desired. Garnish with fresh basil leaves and additional red pepper flakes for extra heat.
