12 oz cheese tortellini

1 cup cherry tomatoes, halved

1 bell pepper (red, yellow, or orange), diced

1 cup cucumber, peeled and diced

1/2 cup red onion, finely chopped

1/4 cup black olives, sliced

1/4 cup feta cheese, crumbled

1/4 cup fresh basil, chopped

1/4 cup olive oil

2 tbsp balsamic vinegar

1 tsp Dijon mustard

Salt and pepper to taste

Instructions
 

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: While the tortellini is cooking, wash and chop the cherry tomatoes, bell pepper, cucumber, red onion, and olives. Place them in a large mixing bowl.

      Mix the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, salt, and pepper until well combined.

        Combine Ingredients: Add the cooked tortellini to the bowl with the vegetables. Pour the dressing over the top and gently toss everything together until well coated.

          Add Cheese and Basil: Fold in the crumbled feta cheese and chopped basil, being careful not to break the tortellini.
