For the Crust:

1 ½ cups chocolate cookie crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the Cheesecake Filling:

24 oz (3 packs) cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

3 large eggs

8 oz semi-sweet chocolate, melted and cooled

8 oz white chocolate, melted and cooled

½ cup sour cream

For the Ganache Topping:

1 cup heavy cream

8 oz semi-sweet chocolate, chopped

For Garnish:

Chocolate shavings or curls

Fresh berries (optional)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 325°F (160°C).

      - In a mixing bowl, combine chocolate cookie crumbs, granulated sugar, and melted butter. Mix until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust.

          - Bake the crust in the preheated oven for about 10 minutes. Remove and let cool.

            Make the Cheesecake Filling:

              - In a large mixing bowl, beat the softened cream cheese with granulated sugar until smooth and creamy.

                - Add in the vanilla extract and mix well.

                  - Incorporate the eggs one at a time, mixing well after each addition.

                    - Divide the filling into three separate bowls.

                      - In the first bowl, add the cooled melted semi-sweet chocolate and stir until fully combined.

                        - In the second bowl, add the cooled melted white chocolate and mix well.

                          - In the third bowl, stir in the sour cream.

                            Layer the Cheesecake:

                              - Pour the chocolate cheesecake filling into the prepared crust and smooth the top.

                                - Then, add the white chocolate filling on top of the chocolate layer and smooth again.

                                  - Finally, top with the sour cream filling, smoothing the surface with a spatula.

                                    Bake the Cheesecake:

                                      - Place the springform pan on a baking sheet and bake in the preheated oven for about 50-60 minutes. The center should be slightly jiggly but set around the edges.

                                        - Once done, turn off the oven and crack the door open. Let the cheesecake cool in the oven for about an hour to minimize cracking.

                                          Prepare the Ganache Topping:

                                            - While the cheesecake cools, bring the heavy cream to a simmer in a small saucepan over medium heat.

                                              - Remove from heat and add the chopped semi-sweet chocolate. Let it sit for 5 minutes, then stir until smooth and glossy.

                                                Assemble and Chill:

                                                  - Once the cheesecake is completely cool, drizzle the ganache over the top and let it set for about 30 minutes.

                                                    - Refrigerate the cheesecake for at least 4 hours, or overnight for best results.

                                                      Garnish and Serve:

                                                        - Before serving, garnish with chocolate shavings or curls and fresh berries if desired.
