For the crust:

1 ½ cups chocolate cookie crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

For the filling:

16 oz (450g) cream cheese, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

½ cup sour cream

½ cup heavy cream

4 oz (113g) dark chocolate, melted and slightly cooled

4 oz (113g) milk chocolate, melted and slightly cooled

4 oz (113g) white chocolate, melted and slightly cooled

For the ganache topping:

½ cup heavy cream

4 oz (113g) dark chocolate, chopped

For garnish:

Chocolate shavings

Fresh berries (optional)

Instructions
 

Prepare the crust:

    - Preheat your oven to 325°F (160°C).

      - In a mixing bowl, combine chocolate cookie crumbs, melted butter, and sugar. Mix until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to create the crust. Bake for 10 minutes, then remove and let cool.

          Make the filling:

            - In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy.

              - Add the eggs one at a time, mixing well after each addition.

                - Stir in vanilla extract, sour cream, and heavy cream until incorporated.

                  - Divide the filling into three separate bowls. Mix each bowl with the melted dark, milk, and white chocolate respectively until smooth.

                    Layer the filling:

                      - Start with the dark chocolate filling, pouring it over the prepared crust evenly.

                        - Next, layer the milk chocolate filling on top of the dark chocolate layer.

                          - Finally, pour the white chocolate filling over the milk chocolate layer, smoothing the top.

                            Bake the cheesecake:

                              - Bake in the preheated oven for 45-50 minutes, or until the center is set but still slightly jiggly.

                                - Turn off the oven and crack the oven door slightly, letting the cheesecake cool in the oven for an hour to prevent cracks.

                                  Prepare the ganache:

                                    - While the cheesecake is cooling, heat the heavy cream in a small saucepan until simmering.

                                      - Pour the hot cream over the chopped dark chocolate and let it sit for 5 minutes. Stir until smooth and glossy.

                                        Finish the cheesecake:

                                          - After the cheesecake has cooled, pour the ganache over the top, spreading it evenly.

                                            - Allow the cheesecake to cool completely at room temperature before refrigerating for at least 4 hours, preferably overnight.
