Turkey Breakfast Patties with Avocado and Egg

Ingredients
  

1 lb ground turkey

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1 clove garlic, minced

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp black pepper

1/2 tsp salt

1 tbsp fresh parsley, chopped (optional)

2 ripe avocados, sliced

4 large eggs

Olive oil or butter for cooking

Fresh lime juice (optional)

Salt and pepper to taste

Instructions
 

Make the Turkey Patties:

    - In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, minced garlic, onion powder, smoked paprika, black pepper, salt, and parsley. Mix until well combined.

      - Form the mixture into 8 small patties, about 2 inches in diameter.

        Cook the Turkey Patties:

          - Heat a skillet over medium heat and add a drizzle of olive oil or a pat of butter.

            - Once hot, add the turkey patties. Cook for about 5-6 minutes on each side or until golden brown and cooked through, reaching an internal temperature of 165°F (75°C).

              - Remove from the skillet and set aside.

                Prepare the Eggs:

                  - In the same skillet, crack the eggs and cook to your preference: sunny-side up, over-easy, or scrambled. Season with salt and pepper.

                    Assemble the Plate:

                      - On a plate, place the cooked turkey breakfast patties. Top each patty with a few slices of avocado. Add the cooked egg on top.

                        - Drizzle with fresh lime juice for added flavor (optional).

                          Serve:

                            - Enjoy the turkey breakfast patties warm, either on their own or with a side of whole grain toast or a fresh salad.
