1 lb ground turkey

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 packet taco seasoning (about 1 oz)

1 cup diced tomatoes

1 cup shredded lettuce (romaine or iceberg)

1 avocado, sliced

1/2 cup shredded cheddar cheese

1/4 cup chopped fresh cilantro

1/4 cup sliced olives (optional)

1 lime, juiced

Tortilla chips or taco bowls for serving

Salt and pepper to taste

Instructions
 

Cook the Turkey: In a large skillet over medium heat, add the ground turkey and cook until browned, about 5-7 minutes. Use a spatula to break it up as it cooks. Drain any excess fat.

    Add Seasoning: Stir in the taco seasoning, black beans, and corn. Add about 1/4 cup of water to help distribute the seasoning. Cook for an additional 5 minutes, allowing the mixture to simmer and flavors to meld. Season with salt and pepper to taste.

      Prepare the Salad Base: While the turkey mixture is cooking, prepare the salad bowls. In each bowl, layer a generous amount of shredded lettuce as the base.

        Assemble the Salad: Top the lettuce with the cooked turkey mixture, diced tomatoes, and avocado slices. Sprinkle shredded cheddar cheese over the top, followed by cilantro and olives if using.

          Add Lime Juice: Squeeze fresh lime juice over each salad bowl to enhance the flavors.
