Ingredients
  

  • 2 lbs beef chuck cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion diced
  • 3 cloves garlic minced
  • 2 medium carrots sliced
  • 2 stalks celery diced
  • 1 can 14 oz crushed tomatoes
  • 1 cup beef broth
  • 1 cup grape juice
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon red pepper flakes
  • to taste salt

  • 1 cup green beans trimmed and cut into thirds
  • 1 cup mushrooms sliced
  • 1 cup cooked cannellini beans
  • for garnish fresh basil leaves
  • for serving grated Parmesan cheese

Instructions

  • Preheat your oven to 325°F (160°C).
  • In a Dutch oven, heat olive oil over medium-high heat and brown the beef cubes seasoned with salt and pepper.
  • Remove the browned beef and set aside.
  • Sauté diced onion, sliced carrots, and diced celery for about 5 minutes until tender, then add minced garlic and cook for 1 more minute.
  • Deglaze the pot with grape juice, scraping the bottom to lift browned bits, and simmer for 3-4 minutes.
  • Stir in crushed tomatoes, beef broth, oregano, basil, and red pepper flakes, then return the beef and add green beans, mushrooms, and cannellini beans.
  • Bring to a simmer, cover, and bake in the oven for 2 to 2.5 hours until the beef is fork-tender.
  • Let sit for 10 minutes before serving, garnished with fresh basil and served with Parmesan cheese.
