1 pound potato gnocchi

1 pound Italian sausage (mild or spicy, your choice)

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (14 oz) diced tomatoes

1 cup heavy cream

2 cups fresh spinach

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

Fresh basil leaves for garnish

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the surface, about 2-3 minutes. Drain and set aside.

    Brown the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the Italian sausage, breaking it up with a spoon. Cook until browned and no longer pink, about 5-7 minutes. Remove the sausage from the skillet and set aside, leaving the drippings.

      Sauté Aromatics: In the same skillet, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

        Add Tomatoes and Cream: Pour in the canned tomatoes (with their juices) and the heavy cream. Stir well to combine, then bring to a gentle simmer.

          Incorporate Spinach and Sausage: Add the fresh spinach and the browned sausage back into the skillet. Season with oregano, red pepper flakes (if using), salt, and pepper. Allow to simmer for about 5 minutes until the spinach is wilted and the sauce is slightly thickened.

            Combine Gnocchi and Sauce: Gently fold in the cooked gnocchi, stirring to coat the pasta evenly with the sauce. Allow to heat through for an additional 2-3 minutes.
