Ingredients

2 lbs ground beef (or ground turkey for a lighter version)

1 cup mashed potatoes (prepared, preferably with butter and cream)

1 cup shredded cheddar cheese

1/2 cup cooked and crumbled bacon

1/2 cup chopped green onions (whites and greens separated)

1/2 cup breadcrumbs

1 large egg

1/4 cup milk

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Extra shredded cheddar cheese for topping

Chopped fresh parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.

Mix the Ingredients: In a large mixing bowl, combine the ground beef, prepared mashed potatoes, shredded cheddar cheese, crumbled bacon, the white part of the green onions, breadcrumbs, egg, milk, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until everything is well incorporated but be careful not to overmix as it can make the meatloaf tough.

Shape the Meatloaf: Transfer the meat mixture into the loaf pan, pressing it down into an even layer. You can shape it into a loaf shape if desired.

Add Cheese Topping: Sprinkle extra shredded cheddar cheese on top of the meatloaf for that delicious cheesy crust.

Bake: Place the meatloaf in the preheated oven and bake for 1 hour, or until the internal temperature reaches 160°F (71°C) and the top is golden brown.

Rest and Serve: Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes. This helps with slicing. Sprinkle the green parts of the chopped green onions over the top for garnish.

Slice and Enjoy: Cut into thick slices and serve warm. This meatloaf pairs wonderfully with a side of steamed vegetables or a fresh salad.
