2 cups mixed greens (spinach, arugula, and kale)

1/2 medium cucumber, sliced

1 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

1/2 avocado, diced

1/2 cup chickpeas, rinsed and drained

1/4 cup quinoa, cooked and cooled

1/4 cup grated carrots

Juice of 1 lemon

2 tablespoons balsamic vinegar

1 tablespoon olive oil

Salt and pepper to taste

Instructions
 

In a large salad bowl, combine the mixed greens, cucumber, cherry tomatoes, red onion, avocado, chickpeas, quinoa, and grated carrots.
