2 cups all-purpose flour (or whole wheat flour)

1/2 teaspoon salt

1/4 cup olive oil (or melted coconut oil)

3/4 cup water (add more if needed)

1 teaspoon dried herbs (like rosemary or thyme, optional for flavor)

Instructions
 

Prepare the Dough: In a mixing bowl, combine the flour and salt. Mix well to evenly distribute the salt throughout the flour.

    Combine Ingredients: Gradually add the olive oil to the flour mixture, mixing with your fingers or a fork until the mixture resembles coarse crumbs.

      Add Water: Slowly pour in the water (and herbs, if using) a little at a time, mixing until the dough comes together. It should be soft but not sticky. Adjust with more water or flour as necessary.

        Knead: Turn the dough out onto a lightly floured surface and knead gently for about 2-3 minutes until smooth.

          Roll Out: Divide the dough into 6-8 equal pieces. Roll each piece into a circle about 1/8 inch thick. Use a rolling pin for even thickness. Try to keep them as uniform as possible.

            Cook: Preheat a skillet or griddle over medium heat. Place each rolled-out circle onto the dry skillet. Cook for about 1-2 minutes on each side, or until light golden brown spots appear. Adjust the heat as necessary to avoid burning.

              Cool & Store: Once cooked, remove from the heat and let cool on a wire rack. These are best enjoyed warm, but can be stored in an airtight container at room temperature for a few days.
