Ingredients
  

  • 4 large bell peppers
  • 1 pound ground turkey or beef
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 cup onion
  • 2 cloves garlic
  • 1 teaspoon Italian seasoning
  • 1 teaspoon smoked paprika
  • to taste salt
  • to taste black pepper
  • 1 cup shredded cheese
  • for garnish fresh parsley

Instructions

  • Wash the bell peppers and cut off the tops, removing seeds and membranes.
  • In a skillet, cook the ground turkey or beef over medium heat until browned.
  • Add diced onion and chopped bell pepper tops to the skillet and sauté until translucent.
  • Stir in minced garlic and cook for an additional minute.
  • Add cooked rice, diced tomatoes, Italian seasoning, smoked paprika, salt, and black pepper, and simmer for 5 minutes.
  • Fold in half of the shredded cheese until melted.
  • Transfer the mixture to a serving dish and top with remaining cheese and parsley.
  • Serve hot and enjoy the flavors.

Notes

For an elegant presentation, serve in individual ramekins.
