Ingredients
  

1 cup steel cut oats

4 cups unsweetened almond milk (or any plant-based milk)

1 cup fresh or frozen blueberries (plus extra for topping)

1 ripe banana, mashed

1 tablespoon maple syrup (optional, for sweetness)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

A pinch of salt

Chopped nuts or seeds (for topping, optional)

Fresh mint leaves (for garnish, optional)

Instructions
 

In a medium saucepan, combine the steel cut oats and almond milk. Bring to a boil over medium heat, stirring occasionally.

    Once boiling, reduce the heat to low, cover, and let simmer for about 20 minutes, stirring occasionally to prevent sticking.

      After 20 minutes, add the mashed banana, blueberries, maple syrup (if using), vanilla extract, cinnamon, and a pinch of salt to the oatmeal. Stir well to combine.

        Continue to cook on low for an additional 10-15 minutes, or until the oats are creamy and have reached your desired consistency. Add more almond milk if necessary.

          Once cooked, remove from heat and let sit for a few minutes. Serve hot, topped with extra blueberries, chopped nuts or seeds, and fresh mint leaves for garnish.
