Ingredients
  

1 cup all-purpose flour

2 tablespoons sugar (coconut sugar or any preferred sweetener)

2 tablespoons baking powder

1/4 teaspoon salt

1 cup almond milk (or any plant-based milk)

2 tablespoons vegetable oil (or melted coconut oil)

1 teaspoon vanilla extract

Optional: blueberries or chocolate chips for adding to the batter

Instructions
 

In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, and salt. Whisk together until well mixed.

    In a separate bowl, mix the almond milk, vegetable oil, and vanilla extract.

      Pour the wet ingredients into the dry ingredients and mix gently. Be careful not to over-mix; it's okay if there are a few lumps. If desired, gently fold in blueberries or chocolate chips.

        Heat a non-stick skillet or griddle over medium heat. Lightly grease it with a bit of oil if necessary.

          Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 3-4 minutes.

            Flip the pancakes and cook for another 2-3 minutes on the other side, until golden brown.

              Remove from the skillet and keep warm while you repeat with the remaining batter.

                Serve warm with maple syrup, fresh fruit, or your favorite toppings.
