Watermelon Rind Jam

4 cups watermelon rind, peeled and diced (remove green skin)

2 cups sugar

1 cup water

1/4 cup lemon juice (freshly squeezed)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon (optional)

1/4 teaspoon salt

Instructions
 

Prepare the Rind: Start by cutting off the green skin from the watermelon rind and removing any hard parts. Dice the white part of the rind into small cubes.

    Cook the Rind: In a large pot, combine the diced watermelon rind and water. Bring to a boil over medium heat, then reduce the heat and let it simmer for about 10 minutes until the rind is tender.

      Combine Ingredients: Remove the pot from heat. Stir in the sugar, lemon juice, vanilla extract, cinnamon (if using), and salt. Mix well until all sugar is dissolved.

        Cook the Jam: Return the pot to the stove and bring the mixture back to a gentle boil. Stir frequently for around 30-40 minutes until the mixture thickens and reaches a jam-like consistency. To test, drop a spoonful onto a cold plate; if it holds its shape, it’s ready.

          Sterilize Jars: While the jam is cooking, sterilize your jars and lids by heating them in boiling water for 10 minutes then let them air dry.

            Fill the Jars: Once the jam has reached the desired thickness, carefully ladle it into the sterilized jars, leaving about 1/4 inch of headspace at the top. Wipe the rims clean before sealing with lids.

              Process the Jars: If you want to can the jam for longer storage, process the sealed jars in a boiling water bath for 10 minutes. Remove and let cool completely on a kitchen towel.

                Enjoy: Once cooled, your Watermelon Rind Jam is ready to be enjoyed! Spread it on toast, use it as a topping for desserts, or simply eat it straight from the jar.
